We are running an initiative to revitalize and prioritize health in the South Bronx by working with traditionally Latin restaurants. We are looking to hire a chef to showcase the use of fresh ingredients and fresh herbs to contribute to healthy lifestyles.
You would review menus of participating restaurants and identify the offerings that are high contributors to diseases such as hypertension and diabetes due to their salt, oil and sugar content, you would also evaluate the cooking methods used and suggest alternatives.
Preferred if you have knowledge of Latin and Caribbean ingredients and cooking methods. We are looking for chefs to help define and create new preparation methods that integrate local, fresh and seasonal (if applicable) ingredients to shift the current menus into a healthier offering while maintaining the integrity of Latin flavors and the expectations of their customers.
